I tried to think of a clever name for these cookies, but since apparently Im brain-dead or unimaginative or whatever, hmm, not unlike a zombie.
They are crispy, chewy, oatey, chocolatey, coconutty and insanely terrific, just make them then eat them.
what you'll need my zombettes:
- 1 stick unsalted butter, room temperature
- 1/2 c. shortening, I used Crisco
- 1 c. white sugar
- 1 c. brown sugar, packed
Cream well, then add:
- 1 whole egg
- 2 egg yolks
- 1 tsp. vanilla
- 1 tsp. salt
Mix in, then add:
- 1 1/2 c. oats
- 1 c. shredded coconut
- 1 c. chopped chocolate
- 2 c. flour
- 2 tsp. baking soda
Make sure all the flour is incorporated well, then drop onto an ungreased cookie sheet.
If you'd like me to tell you how exactly long to bake them, you should use a 1 oz. cookie scoop.
If you decide to wing it, well then I can't help you.
Bake at 375*F for 13-14 minutes. If you want crispier cookies, bake about 15 minutes.
I like them a little chewier, so its 14 minutes for me.
Chopped dates would be a great sub for the chocolate, but not raisins, eww.
