Over the Top B to the L to the T

*puts pom poms aside, licks greasy bacon fingers*

I hear you asking, "Who needs a recipe for a BLT?"
You've had your momma's BLT, now try this, do it, I double dog dare ya!
Im sure you've seen recipes for brown sugar bacon all over the web...use my recipe for this part or one of your favorites.

what you'll need my little piggies go to market:
1 lb. bacon, thick cut
1/2 c. brown sugar
1 tsp. cracked black pepper

lay the bacon on a baking rack over a cookie sheet and spoon on the brown sugar, smoothing it on so that it covers the slices.  Then sprinkle the pepper over the top.

Bake the bacon at 375*F for about 25-30 minutes.
Since all ovens are different, keep an eye after about 20 minutes.  It can burn easily so you may have to take some slices out before some others get crisp.
Let your bacon cool, then....

2 thick slices bread of your choice, I used a multi-grain harvest loaf.
butter or olive oil  (either is fine)

pan toast your bread on both sides (an iron skillet ROCKS here) with either the oil or butter, I realize this is an extra step, but hey...just do it.

Now you can assemble your sandwich.
I like a little mayo sprinkled with tarragon, field greens and a thick slice of an heirloom tomato.
Im not the BLT police, so do whatever rocks your socks here.

By pan toasting the bread and sugaring the bacon, it just pushes it up a few notches.

Im so lame

please forgive my absence.
The house went up for sale a few days ago and we're just swamped with....swampy things!

Here's to promising a recipe soon, hey at least my kitchen is spotless!
